Here is a recipe I made up myself.
I like sweet potato fries but wanted to try to change it up a bit. Here is what I did.
First I peeled a sweet potato.
Next I used the peeler to make peel strips of the entire sweet potato.
I put it into a ziplock bag with a drizzle of grapeseed oil (just enough to coat them).
Then I sprinkled in cinnamon and sea salt.
I put them onto a baking sheet.
Then baked them at 400 for about 30 minutes (flipping once half way through).
They were SO YUMMY, I made them 2 days in a row. Now time to go buy more sweet potatoes!
