This morning I woke up to a sweet aroma. My husband was busy in the kitchen making Cinnamon Roll Pancakes for breakfast.
For this recipe you will need:
Filling:
- 3 TBSP butter (melted)
- 3 TBSP brown sugar (packed)
- 2 tsp cinnamon (ground)
Pancakes:
- 1/2 cup white flour
- 1/2 cup whole wheat flour
- 1 teaspoons baking powder (heaping)
- 1/2 teaspoon salt
- 1 cup milk
- 1 egg (beaten)
- 1 TBSP oil (coconut oil)
Toppings of your choice:
- ice cream
- cream cheese icing
- chocolate syrup
- graham crumbs
- skor bar pieces
- whip cream etc
For the pancakes, mix together dry ingredients, then add wet ingredients. Fry in a pan over medium heat with the oil, only adding the batter when the pan oil is heated.
Once the pancakes starts to bubble, drizzle the cinnamon filling around and once the pancakes are bubbling in the middle, flip the pancakes and cook till done (about 2 minutes).
Makes 6-8 pancakes.
Top with some cream cheese icing or ice cream and chocolate syrup and if you are adventurous you can even add some graham crumbs or crumbed skor bar pieces.
These would go so good paired with a mug of Crock Pot White Hot Chocolate – YUMMY!!

Made these for my husband and he absolutely loves them! Made a double batch of pancakes and still had enough cinnamon and icing so we have leftovers for lunch tmrw too!
