One of my favorite drinks this time of year is mulled apple cider. A few years ago I experimented to make a version that has become a family favorite.
Jody’s Butterscotch Apple Cider
Make some apple cider. I use apple juice and epicure mulling spices.
In a small cast iron pan I put:
- 1/2 tsp butter
- 2 tbsp brown sugar
- sprinkle of butterscotch chips (optional)
Stir till blended and add:
- 2-3 tbsp cream
Simmer on low, stirring until it has a sauce like consistency.
Pour apple cider in a mug.
Drizzle with sauce…
You can top with whipped cream before the butterscotch drizzle for an extra special treat!
