We spent last weekend at my in-laws house as they were leaving this week for a trip to Phoenix.
Sunday morning my mother-in-law made a delicious baked oatmeal that was a hit with everyone. It had raisins and almonds and was just plain yummy! I had never had baked oatmeal before.
I could kick myself because I did not copy the recipe from her and of course my 6 year old asked for baked oatmeal this morning.
A lady from my Church, Betty, is one of the author’s of a popular food blog {and cookbook} called Mennonite Girls Can Cook. I did not find the recipe in the book, but did a quick search on the blog and found a recipe for Baked Oatmeal with apples and cinnamon. I knew it would not disappoint.
This is what it looked like in my bowl this morning…garnished with some bright raspberries!
Ingredients:
- 3 1/2 cups oats or quick oats (not instant)
- 2 tsp baking powder
- 1 tsp salt
- 1/2 tsp cinnamon
- 1/2 cup brown sugar
- 1/2 cup coconut (optional)
- 1/4 cup oil
- 2 eggs
- 1 apple, grated
- 1 cup milk
For directions on how to make this delicious recipe please see the original post on Mennonite Girls Can Cook.
Although it did not have the raisins and almonds like the recipe Kookum (grandmother in Cree) made last weekend, it was a hit with the family and I know I’ll be making it on many Sunday mornings!

Have you made baked oatmeal before?

Sounds amazing! Pinning it
Thanks Katie, I just love that it is a hit with my girls and hubby who are not the hugest fans of traditional oatmeal!
best breakfast ever
Glad you liked it
I love the idea of adding coconut, I never thought to do that before! Yum!
Yumm this sounds great. I’ll have to give it a try.
I loved it and was so thrilled that the girls and the hubby loved it too. Bonus when everyone enjoys the same thing!
This sounds really good, my daughter is now just starting to eat oatmeal (had allergic reaction as an infant) and loves it, bet she’ll love this too.
Oh, I’m so glad she outgrew her allergy! Let me know what she thinks of the recipe if you decide to try it.
We had it this morning and the girls loved. Hubby wasn’t too sure about it though. :p
Oh my yum! Stumbled, pinned, fb’d, and tweeted… not to mention saved in my bookmarks. Thanks for sharing!
Thanks Virgina! You’ll have to let me know what you think of it if you decide to make it!
We love oatmeal. My favourite is crockpot oatmeal… I love waking up to a hearty, delicious breakfast! I’ll have to give this recipe a try though… it looks fantastic!
No… but I am going to give this a try. Thanks.
I’m so glad you liked it! I have added raisins for my hubby bec that is how he likes it better. You can ad any variation you like. Not much can go wrong.
Yes, we loved it! I”m sure I’ll modify the recipe sometimes depending what we have on hand. How did I go so long without ever trying it?!? Thanks for the comment!
Had baked oatmeal all the time as a kid. Now I make it for my kids sometimes – a warm breakfast on a cold morning!
That sounds delish! Yum!
I have baked oatmeal before – yummy!
Here is the recipe I follow:

I am so going to make this! I love oatmeal but like you, never had it baked before.
no, I’ve never had backed oatmeal but it sounds delicious!!
Thanks for sharing, I google+ it. looks delicious
Now that sounds really interesting. I’ve never baked oatmeal (except as a topping) but I bet my kids would love this. They’re on a HUGE oatmeal kick right now.
Oatmeal is awesome, thanks for this idea. I will have to try it out!
As soon as I read this on Saturday, I went to the kitchen and made it (even doubled the recipe. Had to use a 9×13 pan to bake it in.) I kinda figured that it would taste similar to granola bars/cereal. I was surprised that it didn’t…I guess because of everything that went into it. I’m not sure if it makes a difference or not using steel cut oats…
I have decided that the next time that I make it, I will add more of the ‘extras’ to it (ie. grated apples, coconut) and I will add pecans and raisins. I will be making it again soon as my husband has already eaten almost half the pan and I just made it a few days ago. Obviously, a huge hit in my house! Thanks!!
I’m so glad you took the time to leave me a comment! I love adding the extras, and I’m glad to hear it was a hit in your house!
Jody,
Just a follow up on my previous post… I made the baked oatmeal and had doubled the recipe. My husband ate it every day (sometimes more than once,) and has asked like 3~4 times when I was going to make more. I just wanted to thank you again for such a great, healthy alternative to just a bowl of oatmeal. It is a new family favorite in this house!
Oh Diedra, Thank-you so much for following up! I’m so glad you enjoyed this recipe!
