Many years ago my husband and I lived in Northern Manitoba.  It was good, however it was missing one thing that I grew up with…Bothwell Cheese.  Bothwell Cheese was a staple for me growing in Southeastern Manitoba.  From our family gatherings in New Bothwell to a quick trip to the grocery store it was always there.  When we lived in the far North, our trips home always included a large brick of Bothwell Cheddar and a LARGE bag of the world famous Sqeak’rs – aka Cheese Curds.

I can’t quite put it into words, but there is something about this cheese that makes it better than any other cheese out there.  And with winning first place at the British Empire Cheese Competition for 6 years in a row with their Marble Cheese obviously I am not the only one who thinks that.  Bothwell Cheese also won first place for their Monterey Jack Cheese in 2009 in the same competition.

Bothwell over the years has become very creative with some of their cheeses.  Some of the varieties include Red Wine Extra Old Cheddar, Black Truffle, Red Hot Chilli Pepper Jack, Madagascar Green Peppercorn, Jalapeno Pepper Jack, Horseradish Cheddar, Chia Tea, smoked cheeses, and of course the tried and true cheddar (in a variety of flavors), Mozzerella (in a variety of flavors) and the Squeak’rs cheese curds.  Having tried all these cool varieties of cheeses there are still a couple that are just tried and true faves.    My favorite will always been the cheese curds.  Whether its in poutine, in an omelet, or just as a plain snack just as is, it will always be my favorite.

Red Wine Cheddar Bites

Red Wine Cheddar Bites

Prep Time: 10 minutes
Cook Time: 3 minutes
Total Time: 13 minutes

The old cheddar, tart apple, sweet & spicy jelly and sourdough combination of this appetizer are pleasing to the tastebuds!

Ingredients

  • Bothwell Red Wine Extra Old Cheddar (crumbled)
  • Red Pepper Jelly
  • Sourdough Bread
  • Green Apple (sliced)

Instructions

  1. Slice sourdough bread to desired thickness and size.
  2. Put a layer of red pepper jelly on sour dough bread.
  3. Place crumbled Bothwell Red Wine Extra Old Cheddar on top of the jelly.
  4. Top with a thin slice of green apple.
  5. Place in toaster oven for approx. 3 min or until bread has achieved desired crispness and cheese has melted.
