Bacon Eggnog Pancakes Recipe

It not uncommon for our family to enjoy a breakfast meal for supper. Yesterday my daughters were home from school for a snow day and we decided that is was the perfect night for a breakfast for supper meal. We had started taking out the Christmas dishes and I thought it would be a fun night to use them.

We had Eggnog in the fridge, so we decided to make Bacon Eggnog Pancakes with Maple Syrup – Yummy!!

Bacon Eggnog Pancakes Recipe

bacon, eggnog and pancakes are all great – put them together and you have a delicious breakfast treat!
Ingredients
  • crumbled bacon (cooked)
  • 1 egg
  • 3 tsp coconut oil
  • 1 cup eggnog
  • ½ cup milk
  • 1 tbsp baking powder
  • 1 cup flour
  • 1 tsp sea salt
  • 1 tsp sugar
  • maple syrup
Instructions
  1. Fry a few slices of bacon then cool and crumble.
  2. Beat the egg, add oil, eggnog and milk, then add the mixed dry ingredients.
  3. Pour a ladle of batter on hot griddle, sprinkle with bacon, flip when bubbling and fry till done.
  4. Serve with butter and pure maple syrup and if you have extra bacon you can serve it on the side.

This recipe is fast and easy to make and is a fun twist during the Christmas season.

My husband and daughters were pretty excited to find bacon inside the pancakes!

    I have never cared for Eggnog but I love pancakes! Serving them with red chargers underneath a Christmas plate makes the picture so pretty.

    my tummy’s rumbling at the sheer sight of this delicious food. I too am a breakfast all day sort of person so this would suit me wonderfully any time of day. I never understood that my children thought that breakfast had to be eaten before 11am!
