It not uncommon for our family to enjoy a breakfast meal for supper. Yesterday my daughters were home from school for a snow day and we decided that is was the perfect night for a breakfast for supper meal. We had started taking out the Christmas dishes and I thought it would be a fun night to use them.
We had Eggnog in the fridge, so we decided to make Bacon Eggnog Pancakes with Maple Syrup – Yummy!!
- crumbled bacon (cooked)
- 1 egg
- 3 tsp coconut oil
- 1 cup eggnog
- ½ cup milk
- 1 tbsp baking powder
- 1 cup flour
- 1 tsp sea salt
- 1 tsp sugar
- maple syrup
- Fry a few slices of bacon then cool and crumble.
- Beat the egg, add oil, eggnog and milk, then add the mixed dry ingredients.
- Pour a ladle of batter on hot griddle, sprinkle with bacon, flip when bubbling and fry till done.
- Serve with butter and pure maple syrup and if you have extra bacon you can serve it on the side.
This recipe is fast and easy to make and is a fun twist during the Christmas season.
My husband and daughters were pretty excited to find bacon inside the pancakes!
