One thing I have realized on my real food journey is that food actually tastes really good. I think I forgot what real food actually tasted like when it was always processed or covered in sugar filled, or artificially flavored sauces.
Simple is often better – these chicken lettuce wraps are so tasty, healthy and very easy to make.
- 3 chicken breasts
- 1 medium onion (chopped)
- ½ red pepper
- ½ yellow pepper
- ½ green pepper
- coconut oil
- pink salt (Himalayan)
- Leaf Lettuce
- Cut the chicken into strips and fry in coconut oil - I use a cast iron pan.
- In another pan sauté the onion in coconut oil over medium heat - after 5 minutes add the slices of peppers and the pink salt to taste - keep on the stove top till done. (I do not like my peppers to get soggy, so I keep them on for only a few minutes.)
- Combine the chicken, onions and peppers and put by spoonful onto a lettuce leaf. Wrap up the lettuce and enjoy.
- Once the chicken and veggies are in the lettuce they will need to be eaten immediately.
