Creamy Cashew Peppermint Hot Chocolate

Creamy Cashew, it just sounds delicious. As a person who does not drink milk I am always taste testing dairy alternatives. I wanted to make a peppermint hot chocolate recipe and I wanted it to be super creamy, so I decided to put the Silk Creamy Cashew to the test.

For this recipe you will need:

  • 1 cup Silk Creamy Cashew
  • 1 heaping tbsp cocoa
  • 2 tsp pure maple syrup
  • 2 drops peppermint essential oil

Optional (for the drizzle topping)

  • 2 tbsp coconut cream
  • 1 drop peppermint essential oil
  • cocao nibs

Place the Silk Creamy Cashew, cocoa, maple syrup and peppermint essential oil in a blender (I use a Vitamix) and blend for for 5-6 minutes on high. The drink will get steaming hot from blending.

While the drink is blending, get a little bowl and mix the coconut cream with the drop of peppermint essential oil and set aside.

Pour the steaming Creamy Cashew Peppermint Hot Chocolate into a mug, drizzle on the coconut cream mixture and sprinkle the top with cocao nibs if desired.

Enjoy.

The creamy cashew in this peppermint hot chocolate was a huge hot for our whole family. It was very rich and creamy and the flavors were over the top.
