Salmon Patties

I love meals that I can make in a hurry, saying that, when it comes to real food, it is sometimes hard to find an option that is quick and healthy. These salmon patties are the perfect solution and are a favorite for our family.

I posted a picture of our salmon patties on Instagram and Facebook and soon I had a number of people asking for our recipe, so here it is. I hope you enjoy it as much as we do.

Yield: 5-6 patties

Salmon Patties

Prep Time: 2 minutes
Cook Time: 10 minutes
Total Time: 12 minutes

These salmon patties are healthy and quick to make - serve them as a burger or on top of a bed of coleslaw and you have a delicious meal.

Ingredients

  • 2 cans salmon
  • ½ fine diced onion
  • 1 egg
  • 1 tsp arrowroot flour
  • 1 fine diced pickle
  • Salt and pepper to taste
  • Oil of choice (coconut oil, lard or butter) We prefer lard.

Instructions

  1. Mix together all the ingredients till well combined.
  2. Form into patties and fry in coconut oil, lard or butter in a cast iron pan over medium/high heat for about 4-5 minutes per side or until desired crispness.
  3. Note: If you use coconut oil they will not brown up as nice as with lard.

Thanks for this, trying it this weekend! Question though - do you need to use cast iron? As well, arrowroot flour - do you solely use this flour? Never heard of it to be honest with you ... guide me of wise one. lol
