Shrimp Tacos with Pineapple Salsa and Creamy Coleslaw

For many people, cooking with healthy foods can be a challenge.  Many of you have been following us in our new healthy journey, you have seen some of our food ideas and recipes. Today I will share a recipe with you that we love serving when we have company. Shrimp Tacos are wonderful and easy to adapt for different diets.

It is important for us to use quality ingredients when cooking for our family. Whether its from a local producer or something that has been labeled as organic, we have to be sure it is safe. We have recently tried Grace products and we love the quality and taste.

Shrimp Tacos with Pineapple Salsa and Creamy Coleslaw

Prep Time: 25 minutes
Cook Time: 10 minutes
Total Time: 35 minutes

Shrimp tacos are simple to make and a quick and delicious meal idea for busy weeknights.

Ingredients

Pineapple Salsa:

  • 2 cups finely chopped pineapple
  • 1/2 cup chopped red pepper
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeno, seeded and diced
  • 2 tbsp lime juice
  • 1 tsp lime zest
  • 1/2 tsp salt

Creamy Coleslaw:

  • 4 cups shredded purple cabbage (about half small cabbage)
  • 1 carrot, shredded (about 1 cup)
  • 1/2 cup chopped green onion
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream (I use my homemade yogurt)
  • 2 tbsp Grace Organic Coconut Vinegar
  • 1 tbsp honey
  • 1 tsp ground cumin
  • 1/2 tsp ground chipotle powder (optional)
  • 1/2 tsp each salt and freshly ground pepper

Shrimp Tacos:

  • 1 tbsp Grace Organic Coconut Oil
  • 1 lb peeled and deveined shrimp (21-25 ct.) (about 3 shrimp per taco)
  • 1/2 tsp ground cumin
  • 1/2 tsp each salt and freshly ground pepper
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1/4 cup chopped fresh cilantro
  • 12 small (6-inch) white corn tortillas, warmed
  • Grace Coconut chips
  • Lime wedges

Instructions

  1. Pineapple Salsa:
  2. Toss pineapple with red pepper, red onion, cilantro, jalapeno, lime juice and salt. Add hot sauce to taste (if using).
  3. Chill for at least 30 minutes before serving. Adjust salt to taste.
  4. Creamy Coleslaw:
  5. Toss cabbage with carrot and green onion. In a separate bowl, whisk mayonnaise with sour cream, Grace Organic Coconut Vinegar, honey, cumin, chipotle powder, salt and pepper.
  6. Toss dressing with cabbage mixture. Let stand for 30 minutes.
  7. Shrimp Tacos:
  8. Heat Grace Organic Coconut Oil in a large, nonstick skillet set over medium-high heat. Add shrimp, cumin, salt and pepper.
  9. Cook, stirring, for 2 minutes or until shrimp are completely pink.
  10. Add lime juice and honey. Cook for 2 minutes or until shrimp is cooked through and well glazed; toss with cilantro.
  11. Fill each tortilla with coleslaw, shrimp and pineapple salsa. Garnish with coconut chips. Serve with extra coleslaw and lime wedges.

Cooking with coconut products is a daily thing for us. Coconut is a healthy food that is very versatile. We fry virtually everything in coconut oil.  Great for high heat frying and great for you. healthy-tacos

Also when baking we have been able to replace white flour with coconut flour.  Great option without the gluten.  Coconut milk is great for drinks that require or when you desire something sweet.  A great alternative for milk especially when making homemade hot chocolate.

Also with eliminating refined sugar, we have had to be creative, especially when cooking.  Coconut sugar is a great option.  It is easily broken down by your body and tastes super yummy too.

These are just a few ways you can work coconut into your diet to make healthy decisions when it comes to lifestyle changes.  Grace products are tremendously helpful when it comes to making these changes.  They are organic and I know that these products are good for me and my family.  With all these products and so much more, they can easily make your life easier when it comes to cooking and diet changes.  Coconut is a great option and you and your body will thank you for it.

These look great, I dont eat shrimp but I'm definitely going to try the coleslaw and salsa with chicken!
