Rosemary and Coconut Sunny Egg Nests

With winter fast approaching, we’ll soon be dreaming of warm, tropical places. Places where drinks are served from coconuts and it is warm all year long thanks to the tropical breezes coming from the ocean.  Here is an egg recipe that will help you through those cold winter mornings with a healthy kick to start your day.

Ingredients: 

4 eggs 

1/4 cup shredded coconut

1 tbsp rosemary 

salt and pepper to taste

Directions:

Preheat the oven to 400 degrees Fahrenheit.

Separate the eggs and gently save each of the yolks.  Whip the egg whites ‘til they are very stiff.  Fold in the coconut flakes to the egg whites.  Next, line a cookie sheet with parchment paper and create 4 dollops with all the coconut egg white mixture.  Create a well on each dollop for the reserved egg yolk.  Gently place the yolk in each well and sprinkle each with the rosemary and salt and pepper.  Bake for 15 min at 400 degrees.

This is a super healthy recipe that will make you yearn for those warm summer days.  They look very bright and sunny and taste absolutely amazing.  

This recipe is also a great way to get kids helping in the kitchen.  This is a great way to get children to learn how to separate eggs and these eggs are just so much fun to make.  Children can learn about the different ways that eggs can be cooked and how fun eggs can be to make delicious meals.  My daughters love to  see how light and fluffy the eggs get when they are whipped.
