PAN ROASTED BRUSSELS SPROUTS WITH BACON AND ONIONS

Brussels Sprouts with bacon and onions are so yummy. Our 7 and 10 year old daughters even love eating brussels sprouts – I have to admit, I hated brussels sprouts as a child, but I have grown to enjoy them now too.

Here is a recipe for Brussels Sprouts with bacon and onions – because everything is better with bacon and onions!

Pan roasted brussels sprouts

Yield: 6

Pan Roasted Brussels Sprouts with Bacon & Onions

Ingredients

  • 1 16-ounce bag fresh brussels sprouts
  • 1 large yellow onion
  • 4 slices thick cut bacon, diced
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Wash and dry the brussels sprouts, trim off the bottom stem and slice in half.
  2. Wash and dry the onion, cut it in half and slice it into 1/4" strips.
  3. Add the bacon to a large skillet over medium heat and cook until brown and crispy.
  4. When the bacon is done, remove it from the pan with a slotted spoon and place it on paper towels to drain.
  5. Pour off all of the bacon grease from the pan, leaving behind approximately one tablespoon.
  6. Add the olive oil to the reserved bacon grease.
  7. Turn the heat down to medium, add the Brussels sprouts and onions and toss to combine.
  8. Cover and cook for 15 minutes, stirring every 3-4 minutes. If it appears to be cooking too high, turn the heat down a bit.
  9. Uncover and cook for an additional 5-8 minutes or until tender and slightly brown. If you want them even browner, uncover halfway through cooking.
  10. Sprinkle in the reserved bacon pieces and stir to combine.
  11. Taste and adjust the salt and pepper to your liking before serving.
