This homemade peanut butter cookie recipe is not the traditional peanut butter cookie recipe which needs to be rolled into balls and patterned with the criss-cross pattern of fork tines.

Although you can do that too if you wish! I have tried both ways, and I much prefer this method in both taste and appearance.

Yield: 2 dozen

HOMEMADE PEANUT BUTTER COOKIE RECIPE

Cook Time: 10 minutes
Total Time: 10 minutes

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup creamy peanut butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg
  • 1tsp vanilla
  • 1 1/2 cups flour

Instructions

  1. In a large bowl beat together butter and peanut butter for about 30 seconds on medium/high, until light and fluffy.
  2. Add both sugars, baking soda, baking powder and salt. Beat until combined.
  3. Beat in egg and vanilla.
  4. Beat in flour on low until incorporated without over mixing. Cover and chill in the fridge for half an hour.
  5. Preheat oven to 375F.
  6. Scoop a small amount of dough out and place on un-greased cookie sheet 2 inches apart. Press down on the scoops of dough ever so slightly, as you want to keep a thick cookie.
  7. Bake for 9-11 minutes, or until the bottoms are slightly golden brown.
  8. The cookies will look as though they are not ready but they will firm up as they cool. Remove from the oven. After 3 minutes transfer to a wire cooling rack.
