SIMPLE ONE POT LASAGNA SOUP RECIPE

We have all had those situations when we invited our friends to lunch or supper, but we actually didn’t have the slightest idea what dishes to make. If you need some inspiration, I want to share my favorite recipe with you – One Pot Lasagna Soup.

INGREDIENTS

You will need a large stockpot where you can heat olive oil. When the oil is ready, it’s time to add sausage. This part requires your extra attention, because if the sausage burns, your dish will end up in a trash. So, keep the eye on the stockpot.

When the sausage is cooked through, you should add onion and then cook a while. When you notice that both the sausage and the onion are softened, simply add minced garlic.

Next add salt and pepper, oregano, basil and red pepper flakes.  The combination of these spices will make this meal finger-licking delicious!

Add tomato paste very slowly and make sure that you stir all the time until incorporated.

Add in crushed tomatoes, water, bay leaves and chicken stock.  Bring mixture to a boil and cook for 5 minutes.  Reduce the heat and let the mixture to simmer for 30 minutes.

Add lasagna noodles and cook them until they become soft – but not doughy.

Transfer the soup to your favorite serving bowls and grab that ricotta mixture (Parmesan cheese and ricotta mixed together ready to top your soup with).  You will fall in love with this impeccable combination!  Did you know that you can you freeze ricotta cheese?

Ingredients

  • 1 1/2 pounds sweet Italian chicken sausage
  • 8 oz. lasagna noodles, broken into 2" pieces
  • 1 (28 oz.) can crushed tomatoes
  • 2 1/2 cups water
  • 8 oz. ricotta cheese
  • 4 cups chicken stock
  • 3 tablespoons grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 2 tablespoons olive oil
  • 1/2 cup fresh basil, chopped
  • 1/2 teaspoon red pepper flakes
  • sea salt and ground pepper
  • 1 teaspoon dried oregano

In the directions of this soup you say to add an onion but on the list there is no onion shown. And how much onion do you suggest you use?
