Yuca Fries

Yuca fries taste absolutely delicious and they are a great substitution or change from the traditional potato fries.
  • Yuca (cassava) root
  • lard
  • salt (I use pink Himalayan salt)
  1. Preheat oven to 425 degrees.
  2. Remove the peel from the yuca, cut the yuca in 2 or 3 pieces to fit in a pot of boiling water.
  3. Boli for about 15 minutes or until a fork can prick into the yuca easily.
  4. Cut the boiled yuca into fries and place on a greased (with lard) pan. Sprinkle with salt (and other spices if desired).
  5. Bake at 425 for about 20 minutes flipping half way through.
