SNOWFLAKE SHORTBREAD COOKIE RECIPE

Having a simple cookie recipe on hand will become a great asset for days when you get unexpected company.  Or when you just want to have fresh, delicious cookies on hand.

This snowflake shortbread cookie recipe is just that!

At first, I thought I wanted to do some of the snowflakes white and some blue and white, but when I saw the blue, I totally fell in love and made them all with blue icing!

SNOWFLAKE SHORTBREAD COOKIE RECIPE

 COOKIE INGREDIENTS

  • 1-1/4 cup flour
  • 1/2 cup butter
  • 3 tablespoons butter
  • 1 tablespoon water

COOKIE DIRECTIONS

Preheat oven to 325 and line a baking sheet with parchment paper.

Place cold butter on a microwave safe plate and microwave for five seconds. Rotate plate (even if you have a turntable) and microwave for another 5 seconds.

Combine flour and sugar in a bowl and mix well.

Add butter and use a pastry blender to cut in butter until the mixture resembles fine crumbs.

You’ll think the dough isn’t coming together but it is.

Once the dough starts to come together, pinch it with your fingers.

I f the mix seems dry, add 1 tablespoon water and mix well.

Shape into a ball and knead a few times until smooth.

Roll dough onto a floured surface and use a cookie cutter to cut cookie shapes.

P lace on prepared pan and bake 8-10 minutes.

Remove from pan and let cool before moving to a wire rack.

ICING INGREDIENTS

  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1/4 teaspoon vanilla
  • Blue food coloring – I used Americolor in sky blue
  • Silver Dragees to decorate

This icing can be your best and worst friend.

If you mix it right – it’s amazing. If you add to much liquid – it’s not!

So start slow and mix, mix, mix before adding more liquid.

ICING DIRECTIONS

Mix powdered sugar, milk and vanilla together in a bowl.

Continue to stir until a consistence is formed that is smooth and settles but not too smooth that it runs all over.

If you are struggling with the consistency, add additional liquid, 1/2 teaspoon of milk or water and stir well after each addition.

Depending on how well you measure your powdered sugar you may need up to 2 teaspoons of additional liquid.

Place icing into a piping bag and cut the tip so you have a fine point.

Pipe the icing onto the cookies and top with silver dragees if desired.

** I make my piping writers and bags out of parchment paper.  There are a lot of youtube videos on how to make them. Or you can purhcase a normal piping bag.**

The snowflake cookies are absolutely beautiful, but I don't think I would have the patience to make the design on them, I would probably end up icing the whole top!
